Stuffed Baked Potatoes

Not every dinner needs to be fancy or complicated. Who has time for that during the week?! I don’t and I bet you don’t either. We all need quick and easy weeknight dinners. One of my favorites is stuffed baked potatoes.

You can do so much with toppings and the prep work is quick.

There are a couple of ways you can bake your potato. Generally, I bake my potatoes in my oven for a couple of hours, but I’ve also done it in the microwave.

How to cook them in the oven:

Wash your potatoes. Be sure to get all the dirt off the potatoes. Pat them dry and poke several holes in the potatoes with a fork. I poke both sides of my potatoes. Wrap in foil and bake for 2 hours at 350 degrees.  You can also cook them at 450 degrees for an hour. Check for doneness by piercing the potatoes with a fork.  The fork should glide in easily.

How to cook them in the microwave:

Wash your potatoes as you would if you were cooking them in the oven. Pat dry and poke several holes in the potatoes using a fork. Place potatoes in the microwave and microwave on high for 7 minutes. Potatoes are done when a fork pierces the skin easily.

Toppings on stuffed baked potatoes is the best part. You can satisfy any craving.

We like:

  • Ground beef
  • Chives
  • Cheddar cheese
  • Bacon bits
  • Sour cream
  • Lots of butter
  • Salt and pepper

Other possibilities:

  • Red or green peppers
  • Salsa
  • Macaroni n Cheese
  • Italian Sausage
  • Gravy
  • etc.

Get creative and have some fun. This is a fun dinner to make for the family. Kids will love being able to make their own and choose their own toppings.
