Did you make any resolutions this year? Do any of them include losing weight or eating healthier? No? Me neither.
I like to make goals each year, but they never seem to be about making dinners that are healthier, I believe in “all things in moderation” over denying yourself something.
A Day in the Life on the Farm is a wonderful and warm blog. Wendy has a way of making you feel like you are sitting in her kitchen on the farm. There were so many recipes I wanted to choose like this Chicken Noodle Soup, or this Blueberry French Toast Casserole.
I slightly changed the recipe. I used spinach as the lettuce because I love spinach other than that I made it exactly as Wendy did and it was wonderful. I really enjoyed the pomegranates in this salad. They are a pain to get out, but worth it in the end. When I was a kid my dad would buy a pomegranate each December and we would share it. I loved that tradition with my dad and now I share one with my husband each year.

- 1 8 oz. bag of Spinach
- Seeds from 1 pomegranate
- 1 sm. red onion, chopped
- ½ c. Miracle Whip
- ⅓ c. sugar
- ¼ c. milk
- 2 tbsp. white vinegar
- 1 tbsp. poppy seeds
- Combine the spinach, pomegranate and onion in a large bowl.
- In a small bowl combine remaining ingredients and whisk until sugar is dissolved. Pour dressing over salad and toss to cover.
