Last year, my guy brought home a treat that one of his co-worker’s wife made. I had never had this yummy, gooey Chex mix before and loved it, in fact, I ate the whole bag of it. Not in one sitting, but I knew that I had to figure out what this was.
As I’m prone to do, I promptly forgot about it until I saw a recipe on Tatertots and Jello and it looked exactly like the recipe from last Christmas. I was so excited I may have squealed in joy. I knew I had to make it and I’m so glad I did.
This ooey, gooey treat is super easy to make and kids will love it. If you have any last minute gifts you need to give to neighbors or kids teachers, this would be excellent. Whip up a batch of this mix, stick it in a cute decorative bag, tie with ribbon, add a tag and you’re done.
The hardest part of this recipe is not eating it all. Seriously! I kept nibbling on it while I was making it. I love gooey, sticky food.
- 6 cups corn Chex
- 6 cups golden grahams
- 2 cups coconut
- 2 cups sliced almonds
- 1 cup light corn syrup
- 1 cup sugar
- ¾ cup butter
- In a large bowl, mix the two cereals, the coconut, and the sliced almonds.
- In a saucepan over medium heat, combine the light corn syrup, sugar, and butter. Boil the liquid for 2 minutes, this will get foamy. Then allow to cool 2 minutes.
- Pour the liquid over the cereal mix.
- Mix well and spread out on two cookie sheets to cool.
