Rice Pilaf
  • 2 Tbsp butter
  • ½ small yellow onion, chopped
  • 3 to 4 garlic cloves, minced
  • ½ tsp ground white pepper
  • 1¼ cups long-grain white rice
  • 2½ cups low-sodium chicken stock
  1. In a medium saucepan, melt butter over medium heat.
  2. Add the onion, garlic and the white pepper.
  3. Stir over medium heat until the onion is soft, but not brown.
  4. Stir in the rice and make sure it's completely coated with the rice and seasonings.
  5. Add in the broth and bring to a boil.
  6. Cover the pan, decrease the heat and simmer until the rice is tender and liquid is absorbed. Takes 15 to 20 minutes.
