Roasted Fingerling Potatoes

Today I have a great side dish for you. Roasted Fingerling Potatoes is an excellent side dish for a special dinner, like Valentine’s Day or for a dinner party. I made these for my husband’s birthday a couple of weeks ago and they were a huge hit. The potatoes are super tender and seasoned perfectly with fresh herbs.

I used all purple potatoes, but you can also use white fingerling potatoes or a mix. The great thing about using these tiny potatoes for roasting is that they take a short amount of time to cook and will be super tender. Exactly how you want a potato to be. I used fresh herbs, thyme and rosemary. This would also work with dried herbs, just change the amounts to your taste. This recipe is the perfect amount for two or you could double it for a larger group.

For easy cleanup you can line a rimmed cookie sheet with foil and then cook accordingly. This way all you have to do is pull the foil off the cookie sheet and throw it away.

To Make –

Preheat oven to 425 degrees. Now would be the time to line a rimmed cookie sheet with foil.

Wash and dry the potatoes

Place freshly washed potatoes in a medium-sized bowl, add the rosemary, thyme and garlic to the bowl and mix.

Drizzle with olive oil, and season with salt and pepper. Mix well. Make sure the olive oil and salt and pepper covers all the potatoes.

Pour the potatoes onto the cookie sheet and place the cookie sheet in the oven. Roast for 20 minutes or until potatoes are tender.

  • 2 cups of fingerling potatoes
  • 2 sprigs of fresh rosemary
  • 3 sprigs of thyme
  • 3 tsp. garlic, minced (or more)
  • 3 tbsp. olive oil
  • salt and pepper, to taste
