Rocky Road Fudge

Rocky Road Fudge is the perfect holiday treat for everyone. A great mix of chocolate, peanuts and marshmallows!

Fudge! Need I say more?! My favorite ice cream is rocky road and this fudge brings together all my favorites – peanuts, marshmallows and chocolate. Perfection!

I make fudge one-time a year and that’s at Christmas time. Fudge is the perfect treat for friends and family. It’s easy to package in cute festive tins and hand out as teacher or neighbor gifts. 

To Make:

Rocky Road Fudge is really simple to make.

  1. In a large bowl, mix together the peanuts and marshmallows. Set aside.
  2. In a medium-sized sauce pan, add the chocolate chips, butter and milk. Heat on medium-low until completely melted. Be sure stir constantly.
  3. Pour the chocolate sauce over the peanuts and marshmallows. Stir until the peanuts and marshmallows are completely covered in the chocolate.
  4. Pour into a 9×13 baking dish lined with parchment paper.
  5. Place in fridge for 2 hours or until firmly set.

Ingredients
  • 6 cups marshmallows
  • 2 cups unsalted peanuts
  • 1 bag chocolate chips (milk or semi-sweet) I used milk chocolate
  • 1 can sweetened and condensed milk
  • 2 tbsp. butter
Instructions
  1. In a large bowl, mix together the peanuts and marshmallows. Set aside.
  2. In a medium-sized sauce pan, add the chocolate chips, butter and milk. Heat on medium-low until completely melted. Be sure stir constantly.
  3. Pour the chocolate sauce over the peanuts and marshmallows. Stir until the peanuts and marshmallows are completely covered in the chocolate.
