Lemon Garlic and Bacon Pasta

Did you know that August is bacon month? I didn’t until recently. If I wasn’t a food blogger and friends with food bloggers then I would never know these things. I’m also terrible at making dishes to go with said holidays, but I did happen to make a recipe with bacon and decided to save it till August just so I could have a bacon dish for bacon month. How’s that for a little behind the scenes of a food blogger?!

Anyhoo… this dish is a great dinner or late night snack. Snack? Yes.  A few nights ago my fiancé and I were up late, past 9 pm(we are real partiers in our house) and were hungry. Usually cereal or crackers and cheese are our late night go-to, but we really wanted something heavier. This is that perfect dish. Quick to put together and gives you that much needed comfort food you desire.

All you need are 5 ingredients plus olive oil.  Linguine, a lemon, garlic, bacon and parmesan cheese, the basics of any kitchen. I did cheat and use the pre-cooked bacon we had in the fridge. Pre-cooked bacon is such a nice thing to have on hand. It’s perfect to add to dishes. It’s not that great if you want bacon for breakfast, but it’s good as a dish accent.

This dish is quick and easy to make. While your linguine is cooking in its pot of salted water, you can make the sauce. In a small skillet, heated over medium-high heat, add your olive oil and garlic. Sauté until the garlic softens about 3 minutes. Add the chopped bacon and heat through. If you are using regular bacon then cook that in a separate skillet until desired doneness, chop and then add to the olive oil and garlic mixture.

Once your pasta is done, drain and add to a large bowl. Pour the olive oil, garlic and bacon sauce over the pasta. Toss the pasta. Add the juice of a lemon and a teaspoon or two of the lemon zest. Add the parmesan cheese and toss. Finish off with a bit of dried parsley on top. That’s it. Like I said super quick and easy.

Ingredients
  • 4 oz linguine pasta
  • 4 teaspoons olive oil
  • 2 teaspoons garlic, minced
  • 4 strips of bacon, chopped
  • 1 lemon, juiced
  • 1 to 2 teaspoons grated lemon peel
  • ¼ cup grated parmesan cheese
  • Parsley, optional
Instructions
  1. Cook linguine in a pot of salted water according to package directions.
  2. In a small skillet, heated over medium-high heat, add your olive oil and garlic. Sauté until the garlic softens about 3 minutes.
