Spanish Rice

Last week I shared my favorite salsa chicken recipe and today I’m going to share the Spanish rice I made to go with it.

This was the first time I’ve ever made Spanish rice, I’ve always thought it would be difficult to make. Not sure why, but I’ve always avoided it.

I’m so glad that I stopped avoiding it and made it. It was so good. I loved it. I wish I had some now. I loved the salsa and onions mixed with the rice. Unbelievable amount of flavor and was super easy to put together. Definitely something we’ll be making more of.

My recipe is adapted from Allrecipes.

How to Make –

1.  Heat vegetable oil in a medium-sized sauce pan. Once the oil is
warm, add the onion. Cook until onion is translucent, about 6
minutes.

2. Add the rice to the pan and mix well.

3. Add the chicken broth and salsa. Mix well. Bring to a boil and then simmer for 25 minutes or until all liquid is absorbed.
