Easy Strawberry Shortcake

This easy strawberry shortcake is a compilation of a couple of dishes I’ve had over the last year. I made this over Memorial Day weekend and it was a hit with everyone.

Last year my fiancé and I took a cooking class. It was a really fun night. We made beef wellington, caramelized carrots and parsnip puree. It was a decadent dinner. At the end of the meal the chef cooking the class served us strawberry shortcake that he had made for us. One of the best strawberry shortcakes I’ve ever had. He told us that he macerated the strawberries in sugar, vanilla and rum. You couldn’t even taste there was alcohol in there; it just gave a great flavor. He also put it in the whip cream.

My second favorite strawberry shortcake is from a restaurant near us that we absolutely love called Market Street Grill. They have the best clam chowder. Some nights we’ll get their sourdough bread and clam chowder to go and eat it at home. A couple of weeks ago we went there for dinner and they were serving their strawberry shortcake for dessert. I’m a sucker for strawberry shortcake. This one was excellent and I loved that instead of a biscuit it was made with little yellow cakes. I’m not always a fan of biscuits used as the shortcake. They can be dry and aren’t sweet. I thought it was genius that Market Street Grill used small cakes. I knew I had to combine the two ideas and make my own easy strawberry shortcake. This is so delicious.

How to Make –

  1. Take 1 box of yellow cake mix and prepare according to directions on the box. Fill 4-inch cake pans half full with the cake mix. Bake at the temperature on the box for 22 minutes or until a toothpick inserted in the middle of the cakes comes out clean. Let cool.
  2. Wash, dry and cut up the strawberries. Place them in a medium-sized bowl. Add the sugar, rum and vanilla bean paste. Mix well and let it sit on the counter for 30 minutes. Serve after the 30 minutes or cover and chill till ready to serve.
  3. To make the cool whip mixture take an 8-oz container of cool whip(thawed) and mix in the vanilla bean paste. Chill till ready to serve.

How to Assemble –

  1. Take one of the cakes and cut in half. Level the top layer if it has a domed top and make it even.
  2. On the bottom layer add the strawberry mixture making sure you get lots of juice. Then add a dollop of the whip cream mixture. Top with the second layer of cake, add more strawberries and juice and finish with more whip cream. Serve.

  • ¼ cup sugar
  • 1 tsp Rum, optional
  • 1 tsp vanilla bean paste
  • 1 box yellow cake mix
  • 1 8-oz container of Cool Whip, thawed
  • 2 tsp vanilla bean paste
  • * 4 4-inch cake pans
