Crock-pot Lemon Chicken

As I’m sitting here writing this post I have two basset hounds rolling around on the floor and barking at each other. It’s like having 5 toddlers rolled into 2 dogs. One of them is mine and one belongs to someone else. Most people when they think of basset hounds think of them as lazy and that they sleep a lot. That is somewhat true, but when you put a 3 year old and a 6 year together craziness ensues. They’ve knocked over a lamp and the TV speakers. It’s been crazy, but they have a lot of fun together.  What does this have to do with Crock-pot Lemon Chicken? Not much other than I’m wishing I had dinner in the crock-pot instead of having to try and fix dinner with these two under my feet.

Now on to the reason you are here – this crock-pot lemon chicken.  This lemon chicken has it all – lemon, pepper, garlic and very tender.   The original recipe from The Recipe Critic uses chicken breasts and I decided to change it to chicken thighs. Chicken thighs are perfect for the crock-pot. They come out nice and juicy and are falling apart when you take them out of the crock-pot. I love that.

How to make –

  1. In a small dish, make sure you can fit your chicken thighs in it, combine the flour and the pepper. Dredge each chicken thigh in the flour and pepper mixture.
  2. In a large skillet, melt the butter over medium heat and brown each side of your chicken thighs. No need to cook them all the way through that’s what the crock-pot will do.
  3. Once your chicken thighs have a nice crust on them transfer them to your crock-pot.
  4. Sprinkle the chicken with the packet of dry Italian dressing seasoning mix.
  5. Pour the lemon juice and the chicken broth over the chicken and add the garlic. Season with salt and pepper
  6. Cook on high for 4 hours.

I served this over mashed potatoes, but would be good over noodles or rice.
