Brown Butter and Cherry Tomatoes with Ravioli

There are some days that feel like they are never going to end. Between work, car pool, laundry and chores it can feel like your to-do list is never going to end.  They just go on and on and on and you can’t see the light at the end of the proverbial tunnel. Then you get to the end of that day and you realize you have no idea what you are going to have for dinner. Do you ever have one of those days? Yes? Me too!

This dish is the answer to your dinner dilemma’s on crazy days. I found this recipe in Lori Lange’s cookbook, The Recipe Girl Cookbook. Takes less than 20 minutes to put together is mouthwateringly delish. Your kids and partners will devour it.

I’ve heard a lot of food bloggers talk about brown butter, but had never had it till I made this dish. Oh.My.Gosh. I don’t know why I waited so long to try it. Now I want to use brown butter in everything I cook, but that wouldn’t be very healthy.

I altered the recipe a bit – I did use salted butter and then I omitted the salt called for in the recipe. I use more butter (this is not a healthy recipe), I use dried basil (didn’t have any fresh on hand) and added garlic.

To Make:

1. Cook the ravioli according to the package directions.

2. Heat a medium sized skillet over medium heat. Once it’s heated add the butter. Allow butter to melt and begin to foam.

3. Reduce the  heat to low and add the tomatoes, garlic, pepper and basil. Allow to simmer for around 7 minutes. During this time your butter will begin to brown and the tomatoes will become soft enough that you can burst them.

4. Serve the sauce over the drained ravioli. Sprinkle with shaved parmesan cheese.

Easy and delicious, perfect for busy days.

  • 1 small package of refrigerated four-cheese ravioli
  • 8 tbsp. salted butter
  • 2 cups cherry tomatoes
  • 1 tsp minced garlic
  • 1 tsp basil
  • pepper to taste
  • shaved parmesan cheese
