Chicken Taco Soup

CHICKEN TACO SOUP

This is the third recipe that I made from 1 rotissere chicken. This was such an economical way to have three easy meals with one chicken. I encourage you to try it with your families.

Normally, I make this with ground beef, but since we are trying to eat less meat I decided to give the chicken a try. We liked it better with chicken than beef.

Speaking of beef…are you more of a red meat eater or do you eat more poultry?

Let me know which you eat more of.

Enjoy!

  1. Hi Julie, I found you via G+. Nice to make your acqaintance. This soup looks delicious! To answer your question, I find myself buying more chicken than beef because chicken is cheaper. I love to braise some short ribs, and roast a tri tip on the grill, but buy those cuts when they’re on sale. For chicken, I really love bone-in, skin-on thighs because they are the perfect portion size for my toddler daughter and very versatile.

  2. Yum. I make this in the crockpot with hamburger meat – my family LOVES it!
