Have you ever made a dish that was so good that you wanted to eat the whole thing yourself? This is one of those dishes. I made this one night just to see how it tasted, and I just about ate the entire thing.
These will make a great sideĀ dish, which is what I did, or over pasta.
If you’re looking for a vegetable dish that will pop in your mouth with flavor, then be sure and give these a try, and they are perfect to make on a busy weeknight.
Ingredients
1 pint of cherry tomatoes, halved
2 to 3 tsp. garlic, minced
1 to 2 tbsp. olive oil
Salt of your choice, I used table salt. Use as much or as little as you like.
Pepper of your choice, I did not use freshly ground, but you certainly could. Again, use as much or as little as you like.
Directions
1. Preheat oven to 375 degrees.
2. In a bowl, mix together the tomatoes, garlic, olive oil, salt and pepper. Spread evenly on a rimmed baking sheet.
3. Bake for 20 to 25 minutes.

I made some of these this summer and froze them. We had a garden and ended up with more cherry tomatoes than any other due to them being labeled wrong. This was a great way to preserve them for later.
