Yams and Apples Casserole

This dish is a  must have in our house for all holidays. It’s so easy and has such a rich flavor to it. Before I was  married I did not like yams and then I had this dish at my mother-in-laws and fell in love. I still won’t eat yams outside of this dish. lol

Guess I’m still picky about my vegetables sometimes. But…I’m improving.

Ingredients

1 large can of cut-up yams

3 apples, peeled and sliced.  Use Golden Delicious or Rome

Sauce –

1 stick of butter

1 cup brown sugar

1 tsp salt

1 cup hot water

1 cup orange juice

3 level tbsp cornstarch mixed with a little cold water

Directions

1. Heat oven to 350 degrees

2. Butter a 9×13 glass casserole dish

3. Alternate yams and apples in the casserole dish

4. Make the sauce and bring to a boil, and then pour in the cornstarch mixed with the water and pour into sauce and stir until thickened

5. Pour over yams and apples

6. Bake in the oven for 1 hour

So delicious. Enjoy!
