Do you like cucumbers? Tomatoes? How about avocados? If you like all three then you will love this salad. I found this recipe last summer on Becky Higgins website, www.beckyhiggins.com and couldn’t wait to make it. The first time I made this, I made it like the original, but since then I’ve tweaked it a bit.
My husband, who is not a huge vegetable fan, enjoys this salad as much as I do. Although, when I do make this I tend to want to hoard it and eat it all myself.

Here’s my take on it:
1 cucumber, peeled and chopped
1 pint of grape tomatoes, I keep them whole
2 avocados, peeled and diced
4 tsp. cider vinegar, I have been known to add a bit more
1 tbsp. olive oil
salt and pepper
Combine dressing, add all the vegetables to a bowl and pour dressing over it. Toss and taste. Adjust the salt and pepper to your liking.
