Cowboy Salsa

For my friends Super Bowl party I made this cowboy salsa a.k.a. cowboy caviar. It’s so easy and super yummy.

It’s best to make this several hours before you want to serve it so it has time to marinate. These are best with lime chips.

Cowboy Salsa

I can of red kidney beans, drained

1 can of black-eyed peas, drained

1 can of black beans, drained

1 can of corn, drained

1 Roma tomato, chopped

1 red onion*, chopped

1 bottle of Italian Zesty Dressing**


Add the canned ingredients, tomato, some onion and cilantro, stir, pour in a bit of dressing, stir again and taste. Add more onion, cilantro or dressing as needed.

*Chop as much red onion and cilantro that fits your tastes. I added half an onion and half a bunch of cilantro.

** Don’t pour in the whole bottle at once, pour a bit and taste. Continue adding dressing until you are happy with the taste. Trust me, you don’t want too much or it’s a bit runny.
