Happy Monday! Here’s a fun summer dish for you, or anytime of year. I will admit that I make this pasta salad at least once a month. I love it that much.  It’s also my go-to dish for potlucks. It’s so easy and quick to put together.

The best part of this salad is the dressing. The combination of tomato paste, olive oil, red wine vinegar with the spices is what makes this salad a hit.  I tend to double the dressing because I like my pasta to have lots of sauce, but it’s just as good not doubled.

Seriously, you must try this salad.

Bow-Tie Pasta Supreme
 
Ingredients
  • Salad:
  • 2 plum tomatoes, chopped
  • ½ medium red onion, chopped
  • 1 small green pepper, chopped
  • 1 lb. mozzarella cheese, diced
  • ¼ tsp. basil
  • 1 lb pasta of your choice
  • Dressing:
  • 1 tsp garlic salt
  • 1 tsp dried oregano leaves
  • 1 tbsp tomato paste
  • 2 tbsp red wine vinegar
  • ⅓ cup olive oil
  • black pepper to taste

Instructions
  1. Cook pasta according to directions and drain, set aside in a large bowl.
  2. Add the tomatoes, onion, pepper, cheese and basil to the pasta.
  3. Mix well.
  4. In a small bowl, whisk the garlic salt, oregano, tomato paste and vinegar together. Stream in the olive oil while continuing to whisk.
  5. Once the oil is incorporated, pour the dressing over the pasta salad, add the pepper and toss well.

Today is the last day of vacation.

Happy Wednesday, I’m still on vacation and am hoping you all are having a good week.

Donuts are my favorite food. I cannot resist the offer of a donut, although I probably should.

Last week I bought a mini-donut pan and a donut maker, I’m excited to try my hand at making donuts.

Chicken Taco Soup

CHICKEN TACO SOUP

This is the third recipe that I made from 1 rotissere chicken. This was such an economical way to have three easy meals with one chicken. I encourage you to try it with your families.

Normally, I make this with ground beef, but since we are trying to eat less meat I decided to give the chicken a try. We liked it better with chicken than beef.

Speaking of beef…are you more of a red meat eater or do you eat more poultry?

Chicken Taco Soup
 
Ingredients
  • 1 to 2 cups shredded chicken
  • 1 packet of taco seasoning
  • 1 can of kidney beans, undrained
  • 1 can of corn, undrained
  • 1 can diced tomatoes or stewed tomatoes, undrained

Instructions
  1. Dump all ingredients into a large pot and bring to a boil.
  2. Simmer for 20 to 60 minutes.
